Variations / Options

I like to add 1 ½ cups of frozen peas to this recipe. Vegetarians may want to add milk to the mashed potatoes to make it bit more creamy. Vegans may use almond milk. Take out of the oven and sprinkle Almond Cheese (vegans) or a bit of Cheddar Cheese not top. Broil 5 minutes to melt. Don’t forget to account for the extra calories.

Ingredients
    • 2 cups vegetable broth, divided
    • 1 teaspoon yeast extract spread, e.g. Marmite/Vegemite
    • 1/2 cup dry lentils
    • 1/4 cup pearl barley
    • 1 large carrot, diced
    • 1/2 onion, finely chopped
    • 1/2 cup walnuts, coarsely chopped
    • 3 potatoes, chopped
    • 1 teaspoon all-purpose flour
    • 1/2 teaspoon water
    • salt and pepper to taste
Directions

1. Preheat oven to 350 degrees F (175 degrees C).

2. In a large saucepan over medium-low heat, combine 1 1/4 cups broth, lentils barley and yeast. Let simmer for 25 minutes.

3. In a medium saucepan combine the remaining 3/4 of a cup broth. Mix in carrots, onions and walnuts. Cook 15 minutes or until tender.

4. Next, bring a large pot of salted water to a boil and add potatoes. Cook until tender but still firm. Approx. 15 minutes. Pour potatoes into stranger, drain water, and transfer to large bowl. Mash potatoes.

5. Combine flour and water together. Stir into carrot mixture and simmer until mixture is thickened. Next, combine carrot mixture with lentil mixture and season with salt and pepper to taste. Pour entire mixture into a 2 quart casserole dish. Spoon mashed potatoes over lentil mixture with large spoon.

6. Bake in preheated oven until top is lightly browned. Approx. 30 minutes
