Variations / Options

Add ½ cup of cooked lentils to the mixture.

Ingredients
    • 4 large portobello mushroom caps, stems and gills removed
    • 1 tablespoon reduced-fat Italian salad dressing
    • 1 egg
    • 1 clove garlic, minced
    • 1 (10 ounce) bag fresh spinach, chopped
    • 1/4 cup grated Parmesan cheese
    • 1/4 cup shredded mozzarella cheese, divided
    • 4 tablespoons seasoned bread crumbs, divided
    • Salt and ground black pepper to taste
Directions

1. Preheat oven to 350 degrees

2. Brush both sides of portobello mushroom with reduced-fat Italian dressing. Place mushroom on a baking sheet about 1“ apart.

3. Bake until tender, approximately 13 minutes. Drain any juice that forms in the mushrooms.

4. Beat together in a large bowl; egg, garlic, salt, and black pepper.

5. Stir spinach, Parmesan cheese, 3 tablespoons of mozzarella cheese, 3 Tbl. bread crumbs into the egg mixture and mix well.

6. Divide spinach mixture evenly into mushrooms. Sprinkle the mushrooms with remaining mozzarella cheese and remaining1 tablespoon bread crumbs. Return mushrooms to the oven.

7. Continue baking an additional 10 minutes or until topping is golden brown and cheese is melted.
